brainstorm


Gerechten kunnen er uit zien als kunstwerken. Maar zijn het dan geen kunstwerken?
Ik bedoel, het urinoir van Marcel Duchamp is ook benoemd tot kunst, ook al is het een urinoir. Dat een gerecht uiteindelijk bestaat uit componenten die allemaal of bijna allemaal (servies niet meegerekend) vallen onder de noemer 'voedsel' of 'eten' hoeft niet te betekenen dat een gerecht om die reden geen kunst is, maar eten.

Maarja, wat is kunst? Die vraag is te complex, al is er wel een soort algemene beschrijving van wat kunst zou moeten zijn:

Kunst is alles wat door een mens is gemaakt en dat tot doel heeft de menselijke zintuigen en geest te prikkelen door originaliteit en/of schoonheid

Wat mij opvalt als ik zoek naar de definitie van kunst is dat er overal kunstrichtingen worden genoemd (schilderkunst, beeldhouwen, film, theater, dans..) maar ik zie daadwerkelijk nooit 'koken' staan.
Koken klinkt dan ook weer totaal niet kunstzinnig, maar als je bijvoorbeeld naar de foto bovenaan dit bericht kijkt, is dat dan 'koken' of is dat meer 'beeldhouwen met voedsel'? Goed, beeldhouwen met voedsel is nog steeds niet per se kunst, want ook niet ieder beeld is kunst. Het doel zou namelijk wel moeten zijn dat de zintuigen EN de geest geprikkeld worden. Zintuigen, ja makkelijk, die worden geprikkeld. Als ik naar dit beeld kijk, word mijn visie absoluut geprikkeld en ik kan vertellen dat de smaak zeker zal worden geprikkeld als je de kans krijgt dit gerecht/beeld/kunstwerk/voedsel/.. op te eten of het nou in positieve of negatieve zin is. Of de geest word geprikkeld, dat is een lastige. Maar er zijn zat kunstwerken waar mijn geest niet word geprikkeld; als het doel van de maker maar is de geest te prikkelen. De geest is natuurlijk iets anders dan de zintuigen. Om dit te achterhalen moet ik eens een (chef)kok gaan interviewen. Dat ga ik doen!


Zo, een kleine brainstorm, het begin van een onderzoek met als doel: bewijzen dat een gerecht kunst kan zijn. Tenzij, natuurlijk, onderweg het tegendeel word bewezen..

Knopen doorhakken

Het word tijd om wat knopen door te hakken. Ik kan natuurlijk eindeloos posten over ‘eten’. Over toffe restaurants, knappe chef-koks, de maatschappelijke/culturele context van voedsel over heel de wereld.. Maar waar wil ik nu eigenlijk heen?
Ik stel mijzelf de vraag:
In welke zin is het fenomeen ‘voedsel’ interessant voor mij en wat wil ik hierover weten?
Na brainstormsessie 1 tot en met 13 kom ik tot de conclusie dat ik eten vaak zie als een kunstenaarsmateriaal. Mijn vriendje is creatieve chefkok. De combinaties die hij op bijbehorend servies tovert, noem ik kleine kunstwerkjes. Stijn noem ik een kunstenaar..
Net als dat klei een kunstenaarsmateriaal is voor een beeldhouwer, kan voedsel dat zijn voor een kok. Of voor een kunstenaar. En dat is precies wat interessant is; een kok, of een kunstenaar. De lijn tussen voedsel als behoefte en als kunst kan in veel gevallen heel dun zijn en waar deze lijn precies zit zou ik niet weten. Op die lijn tussen behoefte en kunst is zeker weten ook een hoop te ontdekken.
De dunne lijn tussen voedsel als levensbehoefte en voedsel als kunst, dat is het gebied waar ik vanaf nu eens lekker in ga zwemmen.
Zo, knoop doorgehakt, nieuw begin.

Deze documentaire van 88minuten geeft de visuele geschiedenis weer van de poulaire citrusvrucht: De Jaffa Orange. De rol van de sinaasappel als nationaal product van Palastina en Israel. Oude Palestijnse en Joodse verbouwers, kunstenaars en academici komen aan het woord.
De sinaasappel. Je koopt 'm in de supermarkt, lekker om te persen, lekker uit 't vuistje, goed voor de vitamientjes. Maar juist deze documentaire laat zien dat iets 'simpels' (zoals wij dat kunnen ervaren) een lange geschiedenis kent en veel teweeg heeft gebracht, voor het desbetreffende gebied.
Sinaasappels werden al eeuwen verbouwd door Palestijnen in Jaffa en in de 19e eeuw werden deze geexporteerd naar Europa en kregen het label: lekkerste sinaasappels. De sinaasappel is ook belangrijk geweest als symbool voor de Joodse staat. Het wrange van deze geschiedenis blijkt uit de situatie na de Israƫlische onafhankelijkheid. De productie kwam in de handen van joden, die het al snel tot de nationale vrucht van Israel maakten en alle herinneringen aan vroeger wisten. Voor de Palestijnen bannelingen werd de sinaasappel het symbool van de wens om terug te keren naar hun land.

De documentaire is de moeite waard. Een vrucht, een waar dat aan een boom groeit en dat wij kunnen laten verdwijnen door deze simpelweg te verorberen. Dat zoiets zo veel invloed heeft gehad op een heleboel mensen, op een cultuur, op conflict..

Jaffa, the orange’s clockwork is a political essay unfolding the story of the invention and the visual history of the world’s wide famous citrus fruit originated in Palestine and known around the world as "Jaffa oranges". While the orange become the symbol of the Zionist enterprise and the state of Israel, for Palestinians it symbolises the lost of their homeland and its destruction. Through a careful reading of the visual representation of the brand, the film reflects on western phantasms related to the ‘Orient’ the ‘holy land’ and the State of Israel and unveils the untold story of what was ones a commune symbol and industry to Arabs and Jews in Palestine.
The oranges of Jaffa, the fruits, the orchards, the brand name and the city - that gave to the fruit its name, are the backdrop of the commune Jewish-Arab life in Palestine before the establishment of Israel, the colonial covetousness, the account of obliteration, nationalization, then repudiation in order to propose a joint historical narrative.

THE CULTURAL POWER OF FOOD (Dutch version)


Carolyn Steel schreef het boek: Hungry city, how food shaped our lives.

Het boek gaat over hoe steden eten, heel kort gezegd. Klinkt simpel, maar onze steden te eten geven heeft een grotere invloed op sociaal/cultureel gebied en op ons milieu, dan al het andere dat wij doen.
Waarom is eten zo interessant? Eten is een eerste levensbehoeft, we doen het allemaal. Maar als je nadenkt over het feit dat er elke dag, voor een stad zo groot als Londen, dertigduizend maaltijden geproduceerd, verkocht, bereid, gekookt, gegeten en weer afgevoerd moeten worden - en dat elke dag voor elke stad op aarde - wordt het ineens een heel ander verhaal. Het is eigenlijk merkwaardig dat wij, aardebewoners, eten. Voedsel vormt steden, en daarmee ook ons. Hoe? Dat is geen blogpost, dat zijn boeken, maar ik ga er wel eens goed over na denken en researchen.

Enkele gedachten van Carolyn Steel die de moeite waard zijn om zo nu en dan bij stil te staan en verder uit te diepen:

Voedsel is altijd in het nieuws; het raakt politieke, sociale, emotionele, psychologische, ecologische en economische kwesties.

Voedsel is het middel waarmee wij vorm geven aan onze planeet en aan onszelf.

Erkenning van de ware kracht van voedsel –i.p.v. reduceren tot goedkope brandstof- betekent het omarmen van een culturele kracht..

Voedsel is drager van een veelvoud aan betekenissen, zo rijk geschakeerd als het leven zelf. Denk aan vriendschap, identiteit, gemeenschappelijkheid, begeerte, genot, offergave, sensualiteit, straf, beloning, gezondheid, welzijn, dikmaker,..

We hebben behoefte aan een nieuw leef- en woonmodel. We moeten stad en land verzoenen, mens en natuur, welvaart en duurzaamheid. Dit is allemaal aan te pakken d.m.v. voedsel.

Society: we want to want more, we need to need more. So we’ve got more and more, and we’ve got it soon. And here we are with all our stuff. And the world is moving fast..

Result: We want less and we want it slow..

So, in 1989 Slow Food Nederland was found. As a reaction on fastfood (the fastfood that WE wanted).

Slow Food is an international movement for eco-gastronomy. One of their goals is to increase the shaping of food-society’s; an economic model that encourages durable production and increases the bonds between people in a society.

The movement counts over 100.000 members in 132 country’s and is grown into a worldwide interactive network.

The company is always alive. The agenda is full of activities, just like workshops, lectures, markets, food fairs and a brand new concept was just born; the Food Filmfestival, which will take place on 18, 19 and 20 march in Studio/K, Amsterdam. The Food Filmfestival shows that food isn’t just one of our basic needs anymore, food is more than that. It is linked to lifestyles, it’s a statement, it’s and art, it’s a vision, it’s a social issue. The Festival shows over 20 films about all these, and more, interpretations of what food is and what food can do. But also discussions, art, music and workshops.

Noma restaurant


Food is art

Noma is a two michelan star restaurant in Copenhagen, Denmark. It’s known for it’s reinvention and interpretation of the Nordic Cuisine. In 2010 Noma was ranked as the best restaurant in the world, by ‘Restaurant’.

The restaurant is located in an old warehouse on the waterfront in the Christianhavn neighborhood of central Copenhagen. The restaurant’s Interior Design is by Signe Bindslev-Henriksen.

The co-owner and chef from this high-qualified restaurant is Rene Redzepi. Before starting Noma, Rene worked at restaurants with high credits, such as El Bulli and Kong Hans Kaelder. He’s a hard working man with passion and eye for quality and beauty. In 2004 Rene Redzepi and his partner Claus Meyer organized the ‘Nordic Cuisine Symposium’. The Nordic Cuisine Movement was born. Farmers and restaurant work together to achieve a high-qualified Nordic cuisine.The cuisine of Noma can be considered more an interpretation of Nordic food than the classical Nordic food itself, but it’s a statement and the love for Nordic products is big. Slow food is the new term. The love for products is what you see when you look at any dish that Rene serves you. It are little pieces of art on the home-customized plates. He brings tastes together that no one expected and the way they melt together, in form and color is unbelievable. Cooking like Rene does is an art, just as painting or photographing can be. His feeling for composition is incredible.

Noma made a book, thank god! It’s named ‘NOMA time and place in Nordic Cuisine’ . You can order it on phaidon.co.uk for 45 euros. It includes over 90 recipes, philosophy and processes of the restaurant, information about the reinvention of the Nordic cuisine and over 200 specially commissioned photographs showing finished dishes, the local ingredients, the restaurant’s supplier and the inspiring Nordic landscape. It’s definitely a piece of art work.
